In Mexico, Campeche is set to host the inaugural national meeting of the National Chamber of the Restaurant and Seasoned Food Industry (CANIRAC). The event promises to highlight the rich culinary offerings of the region, with a particular focus on seafood, including the renowned local delicacies such as shrimp.
Promoting Local Gastronomy
Rodrigo Bojórquez Ruiz, the CANIRAC representative for Campeche, expressed enthusiasm about the opportunity to showcase Campeche’s diverse array of products, including shrimp and octopus. The gathering aims to foster cooperative ties within the industry and raise awareness about the gastronomic treasures Campeche has to offer.
Despite facing setbacks due to inclement weather that led to the cancellation of scheduled events and tours, Campeche’s restaurateurs have adapted by organizing intimate gatherings in closed gastronomic spaces.
Exploring Cultural and Culinary Connections
The upcoming event will also feature visits to cultural landmarks such as the ruins of Edzná, highlighting the intersection of history and gastronomy. Participants will have the unique opportunity to visit local rum factories, savoring the flavors of Campeche firsthand.
Ignacio Alarcón Rodríguez Pacheco, president of the National CANIRAC, emphasized that these initiatives are pivotal in integrating Mexico’s cultural gastronomy. By facilitating exchanges between regions, such as the North and Central Mexico, the event aims to enrich culinary practices and expand the appreciation for local dishes like Campeche’s shrimp specialties.
